Continuing with the grab-and-go breakfast ideas, this week's theme is apple and cinnamon. Below, you'll find a delicious apple slice that’s quick and easy to make, along with an apple cinnamon overnight Weet-Bix for when you want to change up your overnight oats!

Apple Cinnamon Baked Oats

Ingredients:

  • 2 ½ Cups Oats
  • 1 tsp Baking powder
  • 1 ½ tsp ground Cinnamon
  • ½ tsp salt
  • 1 large egg
  • 1 cup milk
  • 1 cup applesauce
  • 1/3 cup honey or maple syrup
  • 2 Tbsp butter, melted
  • 1tsp vanilla
  • 1 cup diced sweet apple (fuji, gala, kenji)

Method:

  1. Preheat oven to 190°C.
  2. In a large bowl, combine oats, baking powder, cinnamon, and salt.
  3. In a medium bowl, whisk together the egg, milk, applesauce, honey (or maple syrup), melted butter, and vanilla until smooth.
  4. Add the wet ingredients to the dry ingredients and mix well. Fold in the apple.
  5. Transfer to a greased 8x8-inch pan (it will be full and liquid).
  6. Bake for 35 minutes, until the edges are browned and the middle is set.
  7. Cool for 20 minutes before slicing, allowing the slice to set; otherwise, it may fall apart.
  8. Store at room temperature for up to 3 days, in the fridge for an additional 2–3 days, or freeze for up to 3 months.

Substitutions:
Gluten free oats or rolled quinoa and baking powder can be used instead. Non-dairy milk of choice can be used, flax egg can replace egg, and coconut oil can be used in place of butter.

Apple Pie Overnight Weet-Bix

Ingredients:

  • 2 Weet-Bix
  • 1/3 cup almond milk (Milk of your choice)
  • 150g Greek Yoghurt
  • ½ Apple
  • ½ tsp Cinnamon
  • 1 tsp maple syrup
  • Chopped almonds, optional

Method:

  1. Combine Weet-Bix and milk to form base
  2. Stir cinnamon through yoghurt and spread over base
  3. Peel and dice apple, microwave 1 min with a teaspoon water to soften then stir through maple syrup
  4. Spoon apple mix over yoghurt and sprinkle with cinnamon and almonds (if using)
  5. Refrigerate overnight
